I bought a cactus leaf for the first time to try. After removing the picks and eyes, I sauteed in olive oil, garlic, garlic paste, minced onions, pepper, lemon pepper. It tasted somewhat like green peppers, but with a hint of bitterness. So I sprinkled a small dusting of brown sugar. Then before serving a light sprinkle of parmesan-romano cheese. Served with chicken breast and sweet potato. Yum

Looks delicious. I've experimented with cactus, but never really found any satisfying way to use it. Looks like you did, though.

No, its a light orange as you can see. They are light skinned sweet potatoes. Less sweet than Yams. I like em better actually.

Looks delicious! I've never had cactus as a side dish, though. Usually I've had them for breakfast when mixed with scrambled eggs and salsa.

Looking at sites on how to cook them, they even make ice cream out of them. Interesting. I will buy more to try out other stuff. Apparently this is an excellent natural way to keep blood sugar balanced.
