A quickie meal

1. Seeing I ate all the yummy bad foods last weekend, I decided to bake a Red Snapper fillet.
2. Really not sure on how to do it, I just winged it, with a little scanning on the internet for some ideas.
3. I diced 2 cloves of garlic, a quarter red bell pepper diced, chopped red onion, a bit of sea salt, and a few small sprigs from my Rosemary tree, and some Paprika. I then stuffed the fish with all this mixture, and added a few dollops of cold butter. And baked at 400 degrees, for 20 minutes.
4. It turned out pretty good. Except for the annoying small bones.
5. But I think next time I may add some dollops of Neufchatel cheese (like cream cheese but made of milk, 1/3 less fat). Or maybe some Parmesan Cheese.
6. I served it with broccoli and some Quinoa.
7. My dessert consisted of Trader Joe's non fat yogurt. I added frozen blueberries and honey.

Sorry for the fuzzy photo. By the time I had uploaded the photo, and seen how bad it was, I had scarfed my dinner (I did 40 minutes of cardio tonight which made me too hungry. So too late to take another one :)

Well for some reason, I can't upload photos, and my LJ Unsorted Scrapbook Gallery has seemed to have disappeared? I know they were doing some Scrapbook maintenance today. I am getting tired of Live Journal and their glitches :(
Well 12 hrs later seems to be working now :)
